big mac salad

Serves 2-4

Ingredients

1/2 pound raw ground beef– Ideally lean beef (grass fed or 93/7)
* Salt and pepper, to taste
1 slice deluxe American cheese, broken up
1 teaspoon minced dry onions (or frozen chopped onion)
46 grams dill pickle slices or 2 dill spears
2 tablespoons Thousand Island Dressing
1 1/2 ounces iceberg lettuce, shredded

Instructions

1. Brown the ground beef, seasoning with salt and pepper as desired

2. Drain off fat from the beef

3. Meanwhile, soak the dry onions in a little water to rehydrate them if using dry onions. If using frozen onions, can let them sauté for 2 minutes before adding beef to the pan

4. Add the cheese and cook until it melts, or add sliced cheese to top of salad

5. Top the lettuce with meat in a large salad bowl and add the remaining ingredients

6. Toss and enjoy!

 

 

As a fast food lover, I love finding low carb twists to less healthy choices! This a good variation on the usually high carbohydrate Big Mac!
